I thought a few games these days had cross-platform matches? Maybe I'm wrong, but surely these would provide clearer data if so

Very few do, simply because PC gamers whip the console gamers
Shadowrun/Universe at War are 2 cross platform games I have tried, both regularly see the PC gamers on the top and the console gamers lower due to the advantages with using a keyboard/mouse over a gamepad.
Even things such as racing games doesn't see a console gamer get an advantage as a PC gamer can use a wheel/pad also

Given that the Xbox & PS3 can both use keyboard/mouse, wouldn't the differences fade with a simple change of control devices?

Yes but once console users start to use keyboards and mice then that will narrow but then processors do not keep up as fast in consoles.

I guess the problem is you pretty much need a desk/table/tray/floating platform if you're a console gamer who wants to use a keyboard comfortably, never mind a mouse

Processors don't make a difference, Resolution/screen format makes a difference Why else would Dice/EA force 4:3 on Battlefield 2 online (and almost every other EA game on the pc that has multiplayer) Also most console gamers don't want a keyboard/mouse as it has very limited use to them

I appreciate that/ I have never used a keyboard or mouse with a console game.

The 360 keyboard/mouse controls do not work properly. There is a device currently being made (looking for the link) which is clever enough to make a keyb/mouse work like its PC counterparts, i.e. it is actually responsive and accurate. Found it.
