The problem is that embedded only has some of the subsystems and software that normal XP has. That means that not all vulnerable bits will be updated, just those that are common to both versions.
In the best case, it will leave the PC vulnerable to exploits that embedded isn't vulnerable to. In the worst case it will bring dependencies that XP can't fulfill and the PC won't work properly or won't be able to boot.
