Maybe I'm a bit behind the times but what's wrong with consuming alcohol in the "normal" fashion? Surely you'd have thought people were aware of the damages of liquid nitrogen? Or have they been confusing it with dry ice? We routinely use liquid nitrogen to freeze off moles and other bits of tissue in minor surgery. I suspect there would have been thermal damage to the stomach. I imagine the perforation was caused by the nitrogen expanding as it became gaseous. Hope she makes a good recovery. |

You wouldn't drink something that was 200 degrees C... so why would you assume drinking something at -200 degrees C is safe to drink?! One of these I think... ![]() |

I'd say it's pretty naturally to assume it wasn't going to explode your insides out - regardless of whether it's sensible to drink these things, you'd assume that it's at least relatively safe in small doses. |

Heston Blumenthal again! It might be practical for commercial cooks but not the domestic cook. It really should have a license to be able to use it. |

It can never be safe. It will cause freeze burns. Even small localised burns can be problematic at times. |

There's something we're not being told about this story. If (for some random reason) it was being added to a drink to produce a mist effect (something you'd use dry ice for normally) then the amount you'd need (less than 5ml) would heat up & evaporate within a matter of seconds. How did she get hold of the drink that quickly or did someone severely fcuk up the measurements? |

Even given the presence of alcohol to act as an anti-freeze, you'd assume if they put way too much in it'd just have frozen the drink itself solid. My guess is she drank it in one go as a birthday dare kind of thing, so the nitrogen didn't get a chance to evaporate. Either way, I think the sales of that kind of cocktail may take a bit of a dip... Jon |

We don't actually know if she knew there was liquid nitrogen in the shot, so you can't necessarily blame the girl. I'm surprised Trading Standards let this sort of thing go on though. |

Well they may simply were not informed. Though the biggest problem for the bar might be their insurance. They will clearly have to pay a substantial sum out in settlement, and the insurers may drop coverage for the bar which will mean that it will close with out public liability coverage. This will probably kill off this drink at all other bars as insurers check what the bars are up to. |

I must confess I am struggling to work out how any actual LN2 could have gotten to the stomach in the first place. Given how hot, relatively speaking, the human body is in relation to LN2 I would have thought it would have evapourated long before it got that far down, you'd have to have a sizeable quantity poured down your throat for it to get to the stomach and that would have given you much bigger problems (like your mouth and throat freezing solid) before it got the stomach. The other possibility is that a sufficient quantity of N2 dissolved in the cokctail when it was being mixed that it caused a massive increase in volume when it outgassed from the cocktail. The process would have been a lot slower than LN2 evapourating (relatively speaking at least) and could explain the stomach pain and perforation that occured. In any case, a pretty horiffic incident. |

When you drop liquid nitrogen onto a warm surface, it skates around for ages in little balls. I've seen people put them on their tongue without injury. It's perfectly possibly to drink the little balls before they evaporate. |
