We are designed to eat and utilise fat. We have a gallbladder and produce bile and hae lipases to metabolise fat. It gets used in many bodily functions. The problem is that all fats are not equal. We are also designed to tolerate small amounts of fat in our diet regularly. But we are not designed to eat huge quantities of meals nor huge quantities of fats. We have access to far more food on a daily basis than our ancestors.

I've always felt that naturally occuring fats eg nuts are better for you than other types of fat.

I assume you mean 'unprocessed', because most fats (e.g. butter etc) are actually naturally occurring.
