It has to be mayonnaise! and some vinegar and salt. and nothing else!

and chips must be cooked twice, once at 140°c and the other at 210°c :D

Now I'd agree with you, with one caveat - if those 'chips' are in fact potato wedges that have been cooked in the oven with a bit of rosemary and sea salt, then dunking them in some nice cold mayo is in fact rather nice.

  1. They're not chips
  2. They're potato wedges
  3. Try adding a little smoked Paprika
