I'd never heard of him either, although I've seen a few of his films.
Man on Fire was good, really enjoyed that.
Enemy of the State was ok
But I'd have to say Last Boy Scout is my favourite from that list.

Yeah I really enjoyed Man On Fire although it's been a while since I saw it. Loved Last Boy Scout too.

Story I heard about Tony Scott: He was shooting an advert on an airfield somewhere in the late 80s. Just after lunch, with still more than half the day's shooting left, he got the runner to warm up the Ferrari. When he got bored with the shoot, he performed a bit of a burn out next to the client, shouted 'So long, [LIFTED]!' and drove off. I'm told he was doing loads of cocaine at the time.

The biggest problem for me is that I haven't seen all the films on the list. Indeed there are major world-reknowned classics that I've never watched but have gotten the gist of through various parodies in shows etc.
I watched Top gun for the first time last year (I think - on E4!). It was good and I suddenly understood everything. It was quintessentially 80s movie fare. BHCII - loved this. Felt it built on the first film in a good way. True Romance/Crimson Tide - not seen but know about. I think the latter I have tried to watch on two occasions and been distracted each time by something else eg phone call/visitors. Loved Enemy of the State - my fave Will Smith film TBH. I remember watching MoF and being impressed by it but recall absolutely nothing about the film. I remember watching Deja Vu - in fact have seen it twice. I like some of the pacing/shots but still think it could have been bettered.
