Does it matter? So long as you're using the same cup, it should work.

Given that a lot of baking relies on ingredient ratios there's no real issue with American measures, provided you don't use different sized cups in the same recipe.
Metric is actually the least sensible in some ways as the ratios are much harder to work out if they've been converted from an imperial recipe (e.g. 8 oz = 225g but 4 oz is 100g). Provided you use the same units throughout and you have a decent set of scales it really doesn't matter.
The American system actually works out better in some regards as you don't actually need scales to make things, just a cup (which I believe was one of the original reasons for coming up with the system in the first place).

My problem with the American system is you can't rely on portion sizes. As you say, if you use the same cup the ratios will be ok but (as an example) with metric measures you know a given list of ingredients will be correct for a given quoted cake tin to bake them in. With American measurements these things are always approximate - you may get enough batter for 12 cupcakes or only 10, which might be a problem - with a single cake if you use a tin that's too big baking it for the recommended time will overcook it.

American measures are internally consistent, European ones are externally consistent.

The point I suppose is to always use one or the other and learn how to adjust for your oven and equipment.

Anyway...this cake is great, so delicious and moist: :lol:

Ingredients:
8oz (200g) mixed fruit
2 medium eggs (beaten)
6oz (150g) brown sugar
6oz (150g) self raising flour
4oz (100g) margarine
1 level teasp mixed spice
Pinch of salt


Place 8oz (200g) mixed fruit into a saucepan and cover with cold water
Bring to the boil and simmer for 5 minutes
Drain and keep in saucepan
Add margarine to the fruit and let it melt
Add beaten eggs, sugar, flour, mixed spice and a pinch of salt
Mix well
Pour into an 8 inch (20cm) tin, greased or lined (or equivalent loaf tin)
Bake at 170°C (340°C, gas mark 4) for approx 1 hour
Remove from tin and allow to cool on a baking rack
Serve with a hot cup of tea!
