I'd have suggested some sort of Windows emulation if it's only for checking her email. We use some form of Exchange web portal for the staff emails on OS X. No complaints.

The web portal doesn't allow for formatting of e-mails, at least not on Exchange 2003.
Using BootCamp or a virtual machine means forking out another couple of hundred for a Windows licence, whereas we still have some Terminals kicking around - that is what the other employees have to use.

Personally, I'd be suggesting to my boss that maybe it was time we upgraded our ten year old email server.
