Right. Trying to make chocolate mousse. My previous attempt involved eggs and although was moussey, wasn't very nice. We put this down to using eggs. So I tried to make an eggless mousse using a recipe I found off google. It involved melting chocolate, adding syrup and folding in whipped cream. Adding the syrup seemed to "stiffen up" the mixture. I should have put it back on heat but didn't. I instead added the whipped cream, which then collapsed. Further whipping resulted in a chocolate milkshake consistency. I tried whipping more cream and adding it but still have thick chocolate milkshake.
Sooo.........giving up on my attempt to try to rescue this "mousse", I've decided to try to use it in another dessert. I have managed to make honeycomb using sugar, syrup and bicarb of soda. Slightly chewy but otherwise like crunchie. Thought about layering crumbled honeycomb with sauce but think I need something to lift it.
Ideas?
What about layers of whipped cream/honeycomb/chocolate sauce? Too rich? What about orange segments? Or banana slices? EDIT: No ice-cream in the house or I would have used that.
