Well, got home and tried to get the backup onto my phone to get my videos, apps, pictures, etc... back.
And... boom, error 21, bricked iPhone again.

Mm.. try this : close iTunes, move the iTunes prefs file & the itunes library files then restart itunes then try again. iTunes saves a lot of the 'sync prefs' in the data files with all the rest of it's crap. You'll have to rebuild playlists & etc but it may get syncing back for you. And if that doesn't work, try downloading iTunes again from http://www.apple.com/itunes, maybe the USB device driver has got corrupted.

Free bumpers, for all purchasers until september 30th, apparently as a goodwill gesture. No other freebies, no recall although they will give full no quibble refunds to anyone who asks. Jobs quotes stats suggesting the complaint & return rates on the iPhone 4 is no different to any other version of the iPhone. He says the prox sensor issue will be fixed in the next OS update.

The problem I have is that I have several backups of texts, pictures, videos, etc... some of which (esp the pics and emails) I haven't transferred to my Mac. How can I get the backup back onto my phone?! I want the stuff back.

You mean you have data on the phone you haven't copied back to the Mac yet? Tricky. Best option might be to try something like phoneview from ecamm. That maybe able to see the data on the phone, although I've got no way of knowing if it'll work for sure with the phone in the state it's in. You could download the demo and give it a try. If you do the itunes things and get the phone working again you may be able to get pics & videos back by telling it not to sync initially then opening iPhoto to copy the data out of it that way. Without knowing exactly what 'error 21' means, I can't say for certain whether any of this stuff is going to work or not...

First part of the press conf apparently was Jobs taking a Blackberry Bold 9700, a Droid Eris and a Samsung Omnia II and showing each one had a 'grip of death' you could hold them by that would wipe at least four bars off their signal meter. The difference (at least in their opinion) isn't that they have the only phone that does this, it's that they have the only phone that tons of people have made a fuss about it happening... Note: I'm not saying I agree, but this is patently Apple's stance : the live feed quote is "But looking at data, we don't think we have a problem."

No, I mean there are photos that were on the phone and since then the phone has been backed up through iTunes. I haven't transfered the pics and videos to iPhoto yet so I don't have them there. The only place I have them is on the backup taken by iTunes. But every time I try to restore it bricks my phone.
