And specifically, is there a way to stop a squeaky pair of leather shoes from squeaking?

I need some new shoes and I have a nice-looking pair in the wardrobe that would be worn apart from the fact they let everyone know I'm coming from 500 yards away. My options are charity bin or fix the squeak (when they bend, ie. every step)

Uhm...
It might be the insole moving as you make your step.
Try seeing if there's a specific moment in your stride where it happens - this might make it easier to track down the source of the movement.
Treat area with something corn starch.
Assess efficacy of treatment.
