Jailbreak it.

I have a terminal app on my iPoT, and it's more or less exactly the same as a 'nix terminal. Works well too, although it won't let me run Folding@Home on it

I've not found anything that will let you run the Terminal actually on the 'Touch, though I use TouchTerm SSH to SSH to various machines and use their shells...
