Evernote - not the sexiest UI, but I like being able to use it on Mac, iPod and work PC.
iNet by BananaGlue - A great way to see what's on your network. Also functions with the likes of iSSH to connect to other computers.
TextMate by MacroMates - It's not been updated in a while and there are rumours of it being killed off, but it is still my number 1 GUI text editor.
Social NetworkingTweetbot by AppBots - makes Twitter almost palatable

Education & ReferenceTED by, well, TED. Time spent listening to smart people talking about the things that fascinate them is never time wasted.
Sky Safari - for the astronomy fan
