When I copy any TV show in to iTunes (so I can play it through my Apple TV), nothing ever wants to go in to the TV category, everything ends up listed under Movies. So all films and all TV shows end up being lumped together, making it pretty tough to find specific things. Anyone know how I can force iTunes to recognise TV shows and place them in the correct category in the left hand pane?

What you need to do is edit the metadata in the file before you put it into iTunes. If the correct metadata isn't there, it uses default settings, which for all video content is to put it in 'movies'. If the metadata is already there, it respects it. There are various apps that allow you to edit the 'tags' in an MP4 files before you copy them over. The most popular app to do that seems to be iDentify but I think there are quite a few you can try to see which you like best.

If the files have already been copied in to iTunes first, then removed, will editing the meta tags and then copying them back place them in the correct category, do you know? I'm just hoping I don't have to rip them all again.

Um. If I understand you right, yes. The fact a file with the same name used to be in iTunes doesn't really matter, when you import it it checks the tags and if the right tags says 'TV show' it puts it under TV shows. No, that won't be necessary. You might have to edit the tags one at a time though. In fact, thinking about it, it might be quicker to just import them into iTunes anyway and edit the tag in there (shift-select files, right click, get info, options tab, set 'Media Kind' to 'TV Show', click OK).

If you already have it in iTunes find it and change the info to make the media kind a movie.

You might have already added it, and it might be shown in music or some other category. Search for it in iTunes to see if it is already there then highlight it and check the options.

In iTunes > Movies, select the movie you want, then >Get Info > Options and change the 'Media Kind' dropdown to whatever you want - Music Video, Movie, Home video, TV Show, etc.. etc..
You can make multiple selections to change several at once.
