There were/are a lot of people using Android 4.1.1/4.1.2 who don't feel the love for Exchange as well.

The amount of traffic being generated is noticeable. We have just a handful of iOS users and a 10mpbs sync line and since the update, all users have been complaining that the whole network is slow (we have a dozen users on a remote site, which uses Terminal Server to work and the 6.1 update has made it nearly impossible for them to work).

We've had this one. Using Microsoft's recommended method for tracking them, we've had six people with this issue out of an iOS device using population of roughly 500 or so, so it's not a problem with everyone who has 6.1, apparently. As of yesterday Apple had posted a knowledge base article about it and apparently there's a fix in the pipeline somewhere. One of your users got stick in a loop and was getting a calendar invite every second or so.

There did seem to be a little over-the-top panic in the beginning to be honest. Some places were banning all 6.1 devices before bothering to look at what the extent of the problem was. That's a bit like burning down an entire village because one person in it got the flu...

Technically, your vulnerability to the problem is largely dependant on how much free space you allowed for the logs to grow on your exchange servers. Generally this is one of those things where you err on the side of caution, if you know what you're doing. Businesses who had skimped on disk space in their exchange environments just found out that's a bad shortcut to take.
