This is intended to provide a fairly up-to-date list of useful links for programming related topics, be they language specific or not. I thought it'd be a good idea, but I can't add too many links right now as I'm clearly working whilst at work.

General
Stackoverflow.com - Good Q&A community site, useful for specific and non-subjective questions (Particularly strong userbase of C# and iPhone devs)

Languages
Java
The Really Big Index - Java online guide
Java 6 API

Python
Python.org - The language's home page

Objective C

PHP
PHP.net

LaTeX
LaTeX WikiBook
The not so short guide to LaTeX

Platforms/Frameworks
.Net/Windows Mobile
MSDN Library
Visual Studio Express Edition - The free versions of Microsoft's IDE
MSDN Coding4Fun - Good selection of project ideas as an introduction to .Net Programming using the Express Edition IDEs.

Cocoa/Cocoa Touch
iPhone Development Guide
iPhone Application Programming Guide
iPhone HIG
OS-X HIG
OpenGL ES from the ground up - A good blog for people wanting to start 3D programming on an iPhone. This starts from the very basics for people who have never done any 3D stuff before.

OpenGL
The Red Book (V1.1) - Old version of the guide to programming using OpenGL

html/CSS
W3Schools

Miscellaneous
Flickr API
Facebook Developers

Tools
Version Control with Subversion - The guide to SVN.

Please feel free to make suggestions! (And no doubt the structure may change once I actually think about this)

Why do the links in the second half appear differently to those in the top half? Bah!

I know it's not a programming language, it's markup, but you can't go far without:
http://www.ctan.org/tex-archive/info/lshort/english/ - The not so short guide to LaTeX...

:D

For any registered iPhone devs, the iPad HIG is online. It's still NDA'd I believe though, so not going to link to it just yet.
