One of out Linux groups uses 100 as its GID, any ideas if I'd break anything by changing the GIDS?

To reply to my own post, looks like it might be the print operator's group so changing it could mess printing up. :(

You might be able to find a tool to do a groupmod?
Have a look at MacPorts (use something like Porticus for a nice front end)
