Image Capture in El Captain reverses the order in which the images appear. In almost every previous version of Mac OS X the app has displayed images first-last, now it's displaying most recent first. Does anyone know how this can be reverted to the previous method? I've gone through the menus and there's nothing immediately available to to this.

Not sure about El Capitan, I'm still on Yosemite, but in earlier versions you could simply click on the relevant column to sort in that order, just as you would in a Finder window in list view.
So, leading from what Steve said, I went through the view options (lower right of main window in 10.11) and I had to enter column view, alter file name order then switch back to thumbnail view and now images are presented to me as in previous versions.
Alex, it is useful on my phone, and just like you that's the way my phone works, but when I connect anything to the Mac, I like it all to be in chronological order. It's just the way my brain works with it best. *shrug*
