Once we've got a nice, level, seeded and luscious paddock instead of the hummocky, patchy, weed-filled rubbish we've got now, it'll be easy to mow with a regular mower. At the moment the only way to get the grass down from the 4 foot length it's at now is either a strimmer (which we don't have) or a scythe which is good honest hard work and intensely satisfying. I've gone the scythe route although I would be quite happy with some sheep or perhaps a donkey to keep the grass down when it's done

Have you considered renting sheep to do it? Approach a local farmer and see if he can rent you a flock for a week or so till it is down to mowing level.

Once the paddock is actually a paddock, rather than the 4foot mess it was, then I'm all about the sheep and donkeys, chickens etc etc. None of them would have been able to deal with the grass that was in the to date though, I could barely get through it; long, dry; wheaty type grass wouldn't have been appealing to any wildlife really. Still, it's all cut down now:  Just have to hope that the paddock people come and spray it all before it grows back!!
