Before supermarkets started opening twenty four hours a day, my dad used to go in at closing time any buy loads of bread which was reduced to clear, then freeze it.
They don't do that any more though.

They do at the mini marts. My local closes at 11pm and there are bargains to be had just before closing time, though I suspect that they have not discounted enough to clear the last bits at closing time and so have to throw it away.
