Hard light Holograms or Light sabers, which will come first?

OK, it's not strictly matter as it's still photons, but still very cool (no pun intended).

How long before I can get my light-sabre?

The idea of it being used as datastorage seems feasible although we can't really measure quantum coherence all that readily and, as far as I'm aware, it's a one-shot read as Heisenberg applies (i.e. reading the data will change it). Still, y'know, lasers and stuff.
