Bedrooms will have internal locks so don't get disrupted. I need one room with a key to store stuff in. Replacing all handles to match that from the first page. At some point (probably when we re-do the bathroom), the doors will get swapped for solid/fireproof ones.

Fireproof? You know the rule about leaving about 5cm under the door for ventilation?

( personally my first action would be to replace all ground floor glazing by at least one ply of laminated glazing)

If your guest would walk in to your bedroom unannounced I'd suggest you find better guests rather than put locks on all the doors.

When guests stay at mine doors are usually open. It's either that or get cats scratching to be let in their bedroom :D

And yes, standard says 5mm to 25mm gap between finishes and door.
