So I deleted a file (one file in the trash can) using Secure Empty Trash. Why, when there was only one file in there did it report it was deleting 5 files? Managed to reproduce it twice.

I believe a secure empty of the trash overwrites the blocks the file occupies on the hard drive multiple times - possibly 3 times, but don't quote me on that. That could explain why it says it's deleting more files, it's just overwriting the blocks multiple times.
Excuse the noobyness ,what key combo is secure empty trash might work for a client of mine .

I don't think it has a key combo, you go under the "Finder" menu at the top and select "Secure Empty Trash" - just under the standard "Empty Trash" option.
