A couple of other alternative methods of booting Snow Leopard into 64-bit have been found :

Either change the Kernel plist file or change the parameters in nv-ram (non-volatile RAM)

Or you can just hold down the '6+4' or '3+2' keys on boot, allegedly.
As I said, you probably don't actually need or indeed want to boot into 64-bit kernel mode anyway. Unless you're sure all the kext's are 64 bit, it's going to break things for no obvious gain. I suspect VMware, Parallels and EyeTV won't run on a 64 bit kernel until they get patched for example.

Basically I'd say unless you know you have to boot the 64 bit kernel and why, you probably don't.
