Anyone know of any good sound recording software, I've tried the inbuilt microsoft recorder with 2 mics and on 2 PC's and no matter what i do I can barely hear the recording even at 100% volume.
Or am I just doing something stupidly wrong?

Audacity is good but it could well be source related. You are using the correct inputs on the machine & have the gain set correctly don't you?

Its just a standard 3.5mm audio jack and I've been into the windows settings, recording devices/levels 100& and tried microphone boost upto 30db.
Can still barely hear myself at 100% volume on playback.

Most PC's have a line in & a mic in. Your symptoms sound like you're using the line in instead of the mic in.
What mic are you using?

One on a logitech headset from about 2 years ago and an ancient desktop mike from about 1997.
Used the nice pink hole on the laptop (never though I would write that). And my front mounted pink hole on the Antec 900.
