Im curious as its a trait/thing ive not really seen before

Generally Physical contact means that they are at ease with you. The hitting can mean she wants to be seen as "One of the guys" and after watching to amny movies thinks that guys when they meet up mock punch each other with a "Yo Dude!"

Followed by repeated use of bro', broseph or dude and the extreme overuse of fistbumping

I've also found that happens when a lady is "interested"... or maybe I'm just equally irresistable and irritating!

You're welcome.
Sounds like she IS at bare minimum comfortable, possibly trying to "tease" you and possibly interested.....
Play the long game and see if you can build tension. If there's no tension, she sees you as a friend - nothing more. A difficult situation if you like her. Trust me, we've ALL been there.
If there is tension, there's hope.

"Does this rag smell of chloroform?" "Does this drink taste of rohypnol?" etc

It's not a dating technique, it's a success story
